Pat Paschal, age 79 and a longtime resident of Rockwall, TX, passed away April 18, 2019. She was born October 21, 1939, in Teague, TX, to William Harvey Scott and Ruth (Kidd) Scott. Pat graduated from Sam Houston State University in 1966 with a teaching degree and taught English and Spanish for over five years. She later went back to school and received her nursing degree. In the 1990’s while living in Teague, she worked in a local restaurant, the Yellow Rose Café, where she shared her love of cooking, especially for her neighbors. A charming and engaging lady, Pat loved to entertain and work in her garden while socializing with friends and neighbors. She especially loved cats, rescuing many during her lifetime and even showing pure-bred Persians. Pat was an active member of First United Methodist Church in Rockwall for over 15 years and was also a member of several book clubs as well as the Rockwall Newcomers and Friends Club. Most importantly, she loved and was devoted to her family and her Sunday school class. She will be deeply missed.
Pat is survived by her sons: Jeff McCoy and wife Jocey of Prosper, TX, and Scott McCoy and wife Sara of North Richland Hills, TX; and grandchildren: Justin, Kaitlyn and Taylor McCoy, all of Prosper, TX. She was preceded in death by her parents.
Funeral services will be held 11:00am Tuesday, April 23, 2019, at First United Methodist Church, 1200 E. Yellow Jacket Lane, Rockwall with Rev. Christina Hildebrand officiating. Services will conclude at the church. A gathering of family and close friends will be held Monday evening at The Gathering at Rest Haven Funeral Home-Rockwall Location from 6:00 to 8:00pm.
